Mushroom & Three Cheese Tortellini with Bacon and Courgettes

INGREDIENTS

300g Delmaine Mushroom & Three Cheese Tortellini

150g rasher bacon

2 courgettes, washed and chopped

1 tsp dried tarragon

1 tsp dried mint

1 tsp rock salt

1 tsp lemon juice

1 clove crushed garlic

1 tablespoon Delmaine Extra Virgin Olive Oil

DIRECTIONS

Fry bacon, drain and chop. Cook pasta according to pack instructions. Steam courgettes for three minutes over cooking pasta, tossing occasionally, until heated through but still firm.  In a large bowl mix courgettes with garlic, tarragon, mint, lemon juice and oil. Add drained pasta and bacon and toss through courgette mixture. Mix through rock salt and serve.
