Ratatouille and Bacon Parcels

INGREDIENTS

Oil for cooking

1 small diced onion

3 slices of bacon

1 can of Delmaine Ratatouille

3 eggs – whisked

3 sheets frozen ready-rolled puff pastry, thawed

1 cup of grated tasty cheese

Chopped parsley for serving

DIRECTIONS

Preheat oven to 180°C. Lightly grease 12 x 3/4-cup capacity Texas muffin pans. Cut pastry sheets into quarters. Gently ease a square of pastry into each muffin pan.

Cook onion and bacon in a small frying pan over medium-high heat for 3 to 4 minutes or until light golden. Add can of  Ratatouille – mix till warmed through,

Fill pastry cases with Ratatouille mix, cover with whisked egg and sprinkle with cheese.

Bake 180°C for 20 minutes until golden. Let cool for 5 mins before removing – sprinkle chopped parsley before serving.
