Warm Mediterranean Chicken and Couscous Salad

INGREDIENTS
250g Delmaine Couscous
2 cups chicken stock
1 rotisserie chicken (shredded)
110g Delmaine Sundried Tomatoes (halved)
100g Delmaine Kalmata Pitted Olives (halved)
1 pottle of Delmaine Marinated Feta (150grams)
1/3 cup sliced almonds (toasted)
150g mixed salad greens
1/4 cup olive oil
1 tablespoon lemon juice
DIRECTIONS
Combine couscous and hot stock. Set aside for 5 mins, or until all liquid has been absorbed. Fluff with a fork. Toss with chicken, tomatoes, olives, feta and almonds. Whisk together olive oil and lemon juice and drizzle over top Mix to combine. Add salad greens, mix and serve immediately.
