Fresh Cream Sauces

Cream and mixed sauces are more traditional in the northern parts of Italy, but most regions offer at least one type of white sauce. Made fresh in New Zealand with fresh cream and other authentic ingredients they are slightly richer sauces than the tomato sauces. Equally delicious they have a greater ability to carry flavours and can be used in a wide variety of dishes both with or without pasta. A creamy Alfredo can be the basis for a quick pasta dish, but could equally be used as the topping for vegetables or potatoes or add some lemon and capers and serve with fish or chicken.
