Almond Fingers with Lemon Icing and Raspberries

INGREDIENTS

250g cream cheese, softened 

1 tablespoon caster sugar

1 tablespoon fresh lemon juice

1 teaspoon grated lemon zest

1 Pack Delmaine Almond Fingers

12 fresh raspberries

2 leaves fresh mint, finely chopped

DIRECTIONS

Beat cream cheese, sugar, lemon juice and lemon zest in a bowl until creamed together. With a piping bag, pipe 4 piles of cream cheese mixture in a row onto each Almond Finger. Place a fresh raspberry in the cream cheese one third from each end. Decorate with remaining lemon zest and chopped mint.
