Beetroot and Feta Salad

INGREDIENTS

Salad

500g Beetroot, raw peeled and grated

700g Carrots, peeled and grated

1 cup of mint leaves, roughly chopped

½ cup of Delmaine Marinated Feta

¼ Cup Sunflower seeds, toasted

¼ Cup pumpkin seeds, toasted

1tsp Salt

 

Dressing

2 Tbsp Delmaine Balsamic Vinegar

2 Tbsp Pomegranate Molasses (if none just double amount of balsamic vinegar)

¼ Cup Orange juice

¼ Cup Delmaine Extra Virgin Olive Oil

1 Tbsp Honey

DIRECTIONS

Prepare all salad ingredients and place them in a large bowl.

Put all dressing ingredients in a jar with a tight fitting lid. Shake well to combine.

Pour the dressing over salad and mix.
