INGREDIENTS

1 red onion diced

1 cup of cucumber diced

1 390g can of Delmaine Black Beans drained and rinsed

2 Corn cobs, husks removed and cooked

4 vine ripened tomatoes diced

2 firm ripe avocadoes diced

¼ cup of Basil chopped

1/4 cup Coriander chopped

1 lemon juiced

2 cloves of garlic minced

½ teaspoon chilli flakes

3 tablespoons of Delmaine Extra Virgin Olive Oil

Salt and Pepper

Garnish with chopped Marinated Delmaine Feta

DIRECTIONS

Cut corn kernels off the cob using a sharp knife.

Toss drained beans, with corn kernels, red onion, cucumber, tomatoes, avocadoes, mint and coriander.

Mix lemon juice, olive oil, garlic and chilli in a separate bowl and season to taste with salt & pepper. Pour dressing over salad just prior to serving.
