Black & Red Bean Salad

INGREDIENTS

1 tin 390g Delmaine Red Kidney Beans, drained

1 tin 390g Delmaine Black Beans, drained

2 tablespoons Delmaine Extra Virgin Olive Oil

2 tablespoons Delmaine White Wine Vinegar

1 teaspoon Delmaine Dijon mustard

1 garlic clove chopped

1 teaspoon sumac

1 tin 400g Delmaine Cherry Tomatoes, drained

40g finely chopped fresh coriander, plus extra coriander for garnish

1 medium onion chopped

Juice of 1 lime

1 large avocado peeled, halved and sliced

DIRECTIONS

In a small bowl, mix oil, vinegar, mustard, garlic and sumac. In a large bowl combine beans, tomatoes, coriander and onion. Mix dressing into bean mixture and let rest for 20 minutes. Add lime juice and avocado to salad just before serving. Garnish with reserved coriander.
