INGREDIENTS

1 cup cooked Delmaine black rice 

1/2 cup roasted cashews

1 red capsicum diced

2 tablespoons soy sauce

1 mango stoned, peeled and diced

1 lime juice and zest

3 spring onions sliced

1 chilli chopped

¼ cup fresh coriander chopped

¼ cup fresh mint chopped

1 teaspoon palm sugar

150g cooked and peeled prawns (optional)

DIRECTIONS

Mix the cooked black rice, prawns, capsicum, mango, spring onions, coriander, mint  and cashews in a large bowl. Mix the soy sauce, lime juice and zest, palm sugar and chilli in a small bowl. Pour dressing over salad and combine.  Great as a side dish to grilled fish
