Cherry Chocolate Sponge Cake

INGREDIENTS

680g Delmaine Pitted Cherries

1 store bought sponge

1 pack instant chocolate mousse

250ml fresh cream

1 tablespoon icing sugar

Delmaine Chocolate Topping for decorating

DIRECTIONS

Make up chocolate mousse according to instructions on pack and place in fridge. Put cream and icing sugar in a bowl and with a hand mixer beat until stiff.  Place all but two tablespoons of drained cherries into bottom of tall baking dish or similar. Place sheet of sponge on top, then top trifle with mousse mix and top in turn with second sheet of sponge. Spread whipped cream over top layer of sponge and decorate with remaining cherries and chocolate topping.
