Roast Beef Rolls with Gherkins and Horseradish Mayo

INGREDIENTS
400g rare roast beef, sliced
4 crusty rolls
1 small red onion, sliced
12 Delmaine Long Sliced Gherkin spears
200g rocket
2 tablespoons mayonnaise
1 tablespoon Delmaine Horseradish
1 teaspoon Delmaine Capers, finely diced
½ teaspoon cracked pepper
DIRECTIONS
In a small bowl mix together mayonnaise, horseradish, capers and pepper. Cut rolls in half and top with mayo mix, gherkins, rocket, onions and beef
