Warm Sundried Tomato Pasta Salad
70g pine nuts
12 Delmaine Marinated Sundried Tomatoes
250g Delmaine Spaghetti Pasta
2 tablespoons Delmaine Capers, rinsed and dried
1/4 cup shredded Parmesan Cheese
2-3 cups wild rocket leaves
freshly ground black pepper to taste
8 Delmaine Kalamata Olives
Dressing: 3 tablespoons each Delmaine Extra Virgin Olive oil, lemon juice
Toast the pine nuts in a heat-proof bowl in the microwave on high power for about 3 minutes, or until lightly coloured.
Drain the tomatoes and pat dry. Halve lengthways.
Cook the pasta according to the packet instructions. Drain the pasta and toss with the capers, Parmesan, rocket, toasted pine nuts, sundried tomatoes, pepper and olives.
Combine the dressing ingredients and warm through. Drizzle over the pasta. Garnish with basil leaves if preferr
